  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 1 ½ cups graham cracker crumbs

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • ¼ cup heavy cream

Instructions

  1. For the strawberry sauce: Cook strawberries, ¼ cup sugar, and lemon juice in a saucepan until softened. Mash into a puree, thicken with cornstarch slurry, and cool.
  2. Preheat oven to 325°F (160°C). Mix graham cracker crumbs with remaining sugar and melted butter; press into a springform pan and bake for 10 minutes.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time. Mix in vanilla, sour cream, and heavy cream carefully.
  4. Pour the filling over the crust, swirl in cooled strawberry sauce, then bake in a water bath for about 60 minutes.
