  • 16 oz short pasta (rigatoni, rotini, bow tie)
  • 10 oz cherry tomatoes (halved)
  • 1 jar sun-dried tomatoes in oil (8.5 oz)
  • ½ red onion (diced)
  • 8 oz mozzarella pearls
  • ⅓ cup chopped basil
  • ⅓ cup extra virgin olive oil
  • 2 T balsamic vinegar
  • 2 garlic cloves (minced)

Instructions

  1. Cook pasta in a large pot until al dente; drain and toss with baby spinach until wilted. Cool slightly.
  2. In a mixing bowl, combine cooled pasta with basil, diced onion, sun-dried tomatoes, cherry tomatoes, parmesan cheese, and mozzarella.
  3. Whisk together olive oil, reserved sun-dried tomato oil, balsamic vinegar, minced garlic, Italian seasoning, salt, and pepper in a separate bowl.
  4. Toss three-fourths of the dressing with the pasta mixture; reserve the rest for later.
  5. Chill in the refrigerator for at least 30 minutes before serving.
