  • 1 large red bell pepper (coarsely chopped)
  • 12 Bird’s eye chilies (chopped)
  • 1 small yellow onion (chopped)
  • 6 garlic cloves (chopped)
  • 2 cups water
  • ½ cup vinegar
  • 1 tbsp salt
  • 1 cup sugar
  • 2 tbsp potato starch (or corn starch)
  • 2 tbsp water (for thickening)

Instructions

  1. Prepare the ingredients by chopping the bell pepper, chilies, onion, and garlic.
  2. In a blender or food processor, combine the bell pepper, chilies, onion, garlic, and water. Pulse until finely chopped.
  3. Transfer the mixture to a pan; add sugar, salt, and vinegar. Simmer over medium heat while stirring until dissolved.
  4. Mix potato starch with 2 tablespoons of water; add to the pan. Stir constantly until slightly thickened; do not overcook.
  5. Allow to cool before serving or store in an airtight jar in the fridge for up to four weeks.
