  • 2 pounds stew meat (chuck)
  • 2 tablespoons flour (for meat)
  • 1 large onion
  • 4 to 5 carrots
  • 3 cups golden potatoes
  • 4 cloves garlic
  • 2 quarts beef stock
  • Fresh herbs (rosemary and thyme)
  • 1 cup flour (for dumplings)
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt (for dumplings)
  • 1 tablespoon butter (room temperature)
  • 1/3 to 1/2 cup milk

Instructions

  1. Cut stew meat into bite-sized pieces; season with salt and pepper. Brown in a large pot over medium-high heat; set aside.
  2. In the same pot, sauté chopped onions, garlic, carrots, and potatoes until softened. Sprinkle with flour.
  3. Return beef to the pot; add tomato paste, herbs, and beef stock. Bring to a boil then reduce heat to low.
  4. Cover and simmer for about two hours until meat is tender.
  5. For dumplings: Mix flour, baking powder, salt, and butter in a bowl; add milk gradually to form a soft dough.
  6. Drop spoonfuls of dough onto the simmering stew during the last 20 minutes of cooking.
