  • 1 whole English cucumber
  • 1 can chickpeas (rinsed and drained)

  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • Juice of 1 lemon
  • 2 tablespoons olive oil

Instructions

  1. Cook quinoa according to package instructions; fluff with a fork and let cool.
  2. Dice cucumber, finely chop red onion, parsley, and mint while quinoa cools.
  3. In a large mixing bowl, combine quinoa, cucumber, chickpeas, onion, parsley, mint, feta, and pistachios.
  4. In a small bowl, whisk together lemon juice and olive oil; drizzle over salad mixture.
