Ingredients

Scale
  • 1 cup unsalted butter (room temperature)
  • 2 cups white sugar
  • 5 large eggs
  • 2 ½ cups all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon vanilla essence
  • 1 teaspoon coconut flavoring
  • 2 cups sweetened shredded coconut (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with vegetable shortening and flour.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one by one, mixing well after each addition. Stir in vanilla essence and coconut flavoring.
  4. In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add this to the wet ingredients alternating with buttermilk until just combined.
  5. Divide the batter between the prepared pans and bake for about 25 minutes or until a toothpick comes out clean.
  6. Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
  7. Frost with seven-minute frosting and sprinkle with shredded coconut before serving.
