  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup half and half
  • 3 oz soft gorgonzola cheese, cubed
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 16 oz cooked gnocchi
  • 6 sage leaves, finely sliced

Instructions

  1. In a large pot, heat vegetable oil and butter over medium heat. Sauté diced onion until translucent (about 5 minutes) then add minced garlic for another minute.
  2. Stir in kosher salt and nutmeg, followed by canned pumpkin puree. Mix well.
  3. Gradually pour in broth, bringing the mixture to a gentle simmer.
  4. In a separate pan, melt butter and whisk in flour until smooth. Gradually add half and half until thickened.
  5. Combine the creamy mixture into the soup base along with cubed gorgonzola cheese until melted, then fold in cooked gnocchi.
