  • 1 1/2 lb boneless, skinless chicken breast
  • 1 can California cling peach slices
  • 1 tbsp peanut or coconut oil
  • 1 tsp salt
  • 1 onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp fresh ginger (minced)
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 1 tbsp Thai chili sauce
  • juice of one lime
  • 1 tsp dried lemongrass
  • 1 tbsp cornstarch
  • 1 red bell pepper (cored and thinly sliced)
  • 1/4 cup chopped peanuts
  • 2 tbsp fresh cilantro (chopped)

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Season chicken with salt, brown both sides for about 3 minutes each, then transfer to a plate.
  3. Sauté sliced onion, minced garlic, and ginger until softened (about 3 minutes).
  4. Whisk together reserved peach juice, honey, soy sauce, fish sauce, rice vinegar, lime juice, chili sauce, lemongrass, and cornstarch.
  5. Add the sauce mixture into the skillet along with bell pepper slices and peach slices.
  6. Stir until the sauce thickens; cover and simmer until chicken is cooked through (about 5 minutes).
  7. Garnish with chopped peanuts and cilantro before serving hot.
