  • 1 1/2 cups red grapes, halved
  • 1/3 cup roasted salted almonds, finely chopped

  • 1/3 cup dried cranberries or raisins
  • 3/4 cup raw cashews, soaked
  • 1/4 cup water
  • 2 tbsp pure maple syrup
  • 2 tbsp apple cider vinegar
  • 1/2 tsp minced garlic
  • heaping 1/2 tsp sea salt
  • Freshly ground black pepper

Instructions

  1. Soak the cashews in water for at least 2 hours or use hot water for a quick soak (10 minutes).
  2. Drain the soaked cashews and blend them with water, maple syrup, apple cider vinegar, minced garlic, sea salt, and black pepper until smooth.
  3. In a large mixing bowl, combine chopped broccoli florets, halved grapes, chopped almonds, diced red onion, and dried cranberries.
  4. Pour the creamy dressing over the salad mixture and toss well until coated.
