  • 1 bundle green onions/scallions, finely chopped
  • Juice of two lemons (about 1/3 cup)
  • 1/4 cup olive oil
  • 2 tbsp rice vinegar
  • 1 cup basil leaves
  • 1 cup baby spinach leaves
  • 2 cloves garlic
  • 1 small shallot, roughly chopped
  • 1/3 cup nutritional yeast
  • Sea salt to taste

Instructions

  1. Chop the cabbage, cucumbers, chives, and green onions. Combine these ingredients in a large mixing bowl.
  2. In a food processor or blender, add lemon juice, olive oil, rice vinegar, basil leaves, spinach leaves, garlic cloves, shallot, nutritional yeast, and salt. Blend for 30-45 seconds until creamy.
