  • 110 g butter
  • 100 g granulated sugar
  • 100 g dark brown sugar
  • 1 egg
  • 230 g all-purpose flour
  • 1 tbsp instant espresso powder
  • 180 g mascarpone cheese
  • 120 g heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together butter, granulated sugar, and dark brown sugar until fluffy. Add egg and vanilla; mix well.
  3. In another bowl, combine flour, baking powder, baking soda, espresso powder, and salt. Gradually add dry ingredients to wet until just combined.
  4. Scoop tablespoons of dough onto the prepared sheet, spacing them apart. Bake for 11 minutes or until edges are lightly golden.
  5. For the mascarpone cream, mix mascarpone cheese, vanilla extract, confectioners sugar, and agave/honey in a bowl. Whip heavy cream separately until stiff peaks form and fold into mascarpone mixture.
  6. Once cookies are cooled, generously top each with mascarpone cream and dust with cocoa powder.
