  • 1 large egg
  • 1 teaspoon vanilla extract
  • 218g all-purpose flour
  • 2.5 teaspoons instant espresso powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 170g white chocolate chips

Instructions

  1. Melt butter in a medium saucepan until nutty and caramelized, about 3-4 minutes. Cool slightly in a heat-proof bowl.
  2. Preheat oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  3. In a small bowl, whisk together flour, espresso powder, cinnamon, salt, baking powder, and baking soda; set aside.
  4. Combine cooled butter with brown sugar, granulated sugar, vanilla extract, and egg until well mixed.
  5. Fold dry ingredients into the wet mixture just until combined; do not overmix.
  6. Gently stir in white chocolate chips.
  7. Form dough into balls (about 1½ tablespoons each) and place on prepared cookie sheet, spacing them at least 2 inches apart.
  8. Bake for 9-11 minutes or until edges are set but centers remain soft.
  9. Cool on the cookie sheet for 5 minutes before transferring to a rack.
