  • 2 tbsp concentrated apple juice
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 3/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/4 tsp ginger
  • 1/8 tsp allspice
  • 3/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 5 oz cream cheese (softened)
  • 4 tablespoons butter (softened)
  • 3 tablespoons caramel sauce (homemade or store-bought)
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar
  • 1/4 cup flour (for streusel)
  • 1 tbsp granulated sugar (for streusel)
  • 1/4 tsp cinnamon (for streusel)
  • 1/4 tsp salt (for streusel)
  • 1 & 1/2 tbsp butter (cold, cubed)
  • 1 green apple (sliced into cubes)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add the egg, concentrated apple juice, and vanilla; mix well.
  3. In another bowl, whisk together flour, spices, baking soda, baking powder, and salt. Gradually combine with wet ingredients until just mixed. Fold in diced green apples.
  4. Scoop dough onto the prepared baking sheet with space between each cookie. Bake for about 12 minutes until golden edges form but centers remain soft.
  5. For frosting: Beat cream cheese and butter until smooth; mix in caramel sauce and powdered sugar until desired consistency is reached.
  6. Allow cookies to cool completely before frosting them generously.
